Restaurant Solitary has once again received recognition, ranking as the 9th best restaurant of 2026 in the Top 50 Restaurants in Finland poll.
Trémouille, who attended school in Rantasalmi and studied to become a chef in Savonlinna, went to work through Farang, Olo, and Jord before heading to Bali and then Australia, where he worked in the restaurants of Jong Niland and Clayton Wells. Markus Heiskanen of Järvisydän in Rantasalmi persuaded Trémouille to return his home region, first to Savonlinna and later to Kuru Resort, built next to Järvisydän.
Solitary’s kitchen is deeply guided by the seasons. The restaurant offers 3- and 5-course surprise menus built around whatever nature has to offer at any given time. The fisherman delivers fish straight to the kitchen’s back door. Herb, berries, and mushrooms are picked directly from the wild. Local producers proudly offer their finest ingredients first to the restaurant of their own village’s son.

I spent my childhood fishing and exploring the nature of Rantasalmi and Lake Saimaa, which is where my appreciation for the local ingredients comes from. My love for butter, on the other hand, comes from my French roots. While the main ingredients in our dishes are sourced locally, we don’t want to be confined to the label of a purely Nordic restaurant. Our food reflects a love for travel and the knowledge gathered from around the world. In addition to working at top restaurants in Finland, I’ve also worked at some of the most prestigious restaurants in Australia and lived in Bali. I hope this is something you can see — and taste — in my food.
